Lo zenzero si trova in commercio sia essiccato che fresco, come rizomi dalla forma irregolare, giallo dorato all'interno. È forse tra le spezie più versatili, si consuma fresco e tritato, tagliato in scaglie sottili, essiccato e tritato in polvere, o anche tagliato a dadini e candito.

Ha un aroma agrumato e leggermente pungente, e soprattutto se consumato fresco da la sensazione di liberare le vie respiratorie. Ha inoltre un alto contenuto in vitamina C, e tisane a base di zenzero o zuppe calde con fette sottili di zenzero fresco sono molto indicate per alleviare il fastidio del raffreddore.

Lo zenzero arricchisce pesce, pollo, legumi, tofu e piatti agrodolci, e può essere accostato alla cannella in molte ricette dolci o salate. Altri accostamenti classici sono l'aglio con cui crea un piacevole contrasto e il coriandolo fresco o la scorza di limone che arricchiscono il suo gusto agrumato.
In occidente è usato soprattutto insieme a altre spezie per la preparazione di tipici biscotti.
