Si tratta dei semi essiccati della pianta nota anche come cilantro, dal sapore agro e pungente. In commercio si trovano interi o già tritati.
I semi di coriandolo sono di color sabbia, con forma sferica e diametro 4-5 mm. Sono piuttosto estetici ma per la loro dimensione si preferisce aggiungerli ai cibi tritati piuttosto che interi.

I semi di coriandolo hanno lo stesso tocco agrumato delle foglie fresche, ma in forma più morbida, con una componente speziata.
Sono ingredienti di diversi masala, miscele di spezie della cucina indiana, come la ben nota polvere curry.
Sono usati per dolci, marinate e molti piatti della cucina araba, indiana e sudamericana.
