La curcuma è una spezia molto usata nella cucina indiana, dall'aroma delicato, leggermente amaro e agrumato, nota soprattutto per la caratteristica di colorare i cibi di giallo dorato.
Elemento principale del misto di spezie noto come curry, cui dona il colore caratteristico, la curcuma è molto usata in piatti della tradizione indiana.
Essa si ottiene dalle radici della pianta omonima (Curcuma longa), in modo simile a quanto avviene per lo zenzero, e si trova in commercio essiccata e ridotta in polvere.
