Il cardamomo o cardamono, ha un sapore dolce e intenso. E' usato in pasticceria in Nord Europa o nei paesi arabi, dove arricchisce anche il caffè o il the.
Si acquista in baccelli, che devono essere aperti e scartati, poichè solo il contenuto interno si utilizza: è infatti una delle spezie più costose.

Ne esistono due varietà: a baccello verde e a baccello nero, di gusto molto più pungente.
Nella cucina orientale il cardamomo viene usato in piatti di riso o verdure, e è un ingrediente fondamentale per i curry e i masala indiani.
