Ingredients

Serves four:
400g aubergines
1 potato
200g minced mutton or lamb meat
1 onion
1 clove garlic
3 tomatoes
1 bay leaf
100g béchamel
30g grated parmesan
olive oil

Cut the aubergines lengthways in long slices about 1/2 cm thick.
Put the slices in a bowl with salted water, cover and press under something heavy 1 hour.
Meanwhile fry the minced onion and garlic in olive oil for a couple of minutes. Add the minced meat and cook 10 minutes.
Peel tomatoes, and cut them into cubes. Add the diced tomatoes and whole bay leaf in the pan. Add salt to taste and cook 1 hour.
Cut the potatoes into slices and fry them. Set aside.
Drain the aubergine slices and fry them in hot olive oil.
Put the fried potatoes in a baking pan, cover with half aubergines.
Pour the meat mixture into the baking pan and cover with the remaining aubergines.
Bake in preheated 200° C (392 F) oven 40 minutes.
