Peach Melba ice cream

Ingredients

Serves four:
300g soft fruits (blackberries, blueberries, raspberries, currant, black cherries)
150g icing sugar
4 tbsp. lemon juice
1/2 tsp. vanilla extract
50ml maraschino
400g Cream Ice
4 half peaches in syrup

Puree the soft fruits with some spoonful of hot water using a blender. Add icing sugar, lemon juice, maraschino and vanilla extract.
Put the ice cream on individual plates, place half peach on top and garnish with the soft fruits sauce.
