Ingredients

Serves four:
200g couscous
50g walnut kernels
1 red onion
4 mint leaves
1 tbsp. olive oil

Cook the couscous following packet directions.
Mince together walnuts, onion and mint leaves and add to the cooked couscous.
Season with olive oil and let set in refrigerator before serving.
