Corn patties with coconut sauce


For the patties:
200g corn kernels
1 carrot
1 scallion or baby onion
1 piece of ginger
1 clove garlic
50g chickpea flour (besan)

For the sauce:
3 tbsp coconut powder
3 tbsp peanut butter
For the coconut sauce: put the coconut powder in a bowl, cover with a couple of spoonfuls of boiling water. Add the peanut butter and mix well.
Blend all the ingredients for the patties.
Heat some oil in a pan and dollop spoonfuls of the batter into the pan. Fry and turn gently when golden brown, using a stirring paddle.
Serve with the coconut sauce.
