Ingredients
Serves four:
200g peas
100g rice
1 egg
1 carrot
1 piece of ginger
1 clove garlic
soya sauce

Cook rice and peas in salted boiling water.
Meanwhile peel the carrot and cut it into
julienne
A julienne (also called a "matchstick") is a type of cut that makes a long thin strip.

Pour the soya sauce in a bowl, add the crushed clove garlic and sliced ginger.
Drain well rice and peas and blend them in a food processor until thick.
Add the fried carrot and beaten egg.
Heat oil in a frying pan.
Wet your hand with a little water before touching the mixture.
Take a spoonful of mixture and shape into a ball. Flatten the ball into a disk and put it in the pan. Fry over medium heat, turning carefully after 2-3 minutes.
Remove the clove garlic from the sauce, and serve with the fritters.
